Old Brewery Kościerzyna Restaurant specializes in regional dishes. However, the Chef has modified the traditional recipes by adding something special to each one of them, thus creating brand new compositions. This allows local people to rediscover flavors that they are already familiar with. Together with cultivating tradition, the Chef constantly introduces innovative techniques of food preparation and creates interesting and daring configurations of ingredients.
An important and frequent piece of many recipes, which adds to their flavor, is beer brewed in the brewery. The specialty of the restaurant is the so-called Brewmaster’s Eisbein prepared in home-brewed Keller beer and served with fried cabbage. One of the four Josper type grill stoves in Poland is located here, which makes fish and meat prepared here become gently browned on the outside and tender on the inside.”
